
Another day of figs! This time in ice cream form. I love all banana based ice creams but banana ice cream with figs is especially good. The thick texture of figs bring a nice consistency to the ice cream.
Ingredients:
- 8-12 Frozen Figs
- 3 Frozen Bananas
- Pinch of sea salt
- Drizzle of agave nectar
- 1/4 cup beet juice (optional)
Directions
- In a Vitamix or food processor, process figs and bananas until creamy.
- Add a bit of beet juice until it is a pretty purple color. This step is optional. I just feel like fig ice cream should be purple for some reason… If you don’t do this, the ice cream will be yellow.
- Scoop into a bowl and sprinkle with a bit of sea salt and agave nectar.
- Eat!

Dawn (Vegan Fazool) - Beautiful! And I have a fig tree that is still (slowly!) producing, I should be able to wrangle eight more figs out of her!
I’m going to do an Early Fall Galette post soon, with a fig galette as one option (and it was very delish! All gone now!).
Will definitely try this (and I KNEW to save that beet juice from last night’s roasted beets, SERIOUSLY, no joke! But, alas, I chucked it :-(
